Boiled Parsley Carrots
Some people like their carrots soft, others prefer them al dente. Either way works great as a side dish to accompany your chicken, or fish main.

Serves: 3-5
Ingredients:
- 1 bag of carrots, peeled and cut
- 1 bunch of parsley, chopped
- 2 tablespoons extra virgin olive oil
- 1 tablespoon garlic powder
- salt/pepper to taste
- 1/2 lemon
Instructions:
Wash and peel carrots. Cut each carrot as thin or thick as you like. Boil in hot boiling water uncovered until tender (about 15-20 minutes). Drain carrots when cooked to desired softness. Toss in a bowl with chopped parsley, salt, pepper, and garlic powder. Add olive oil, squeeze of lemon and extra seasoning as needed.
