Banana Protein Pancakes
Here’s a quick and easy, high-protein, low-carb savory dish sure to satisfy even the most discerning sweet tooth, or satisfy when carb cravings reach their peak.

Ingredients:
- 2 ripe bananas
- 1 cup almond flour
- 2 eggs
- 2 teaspoons coconut oil
- 2 tablespoons honey
- 2 teaspoons baking soda
- 2 teaspoons vanilla extract
- 2 tablespoons almond butter
- pinch of salt
- pinch of cinnamon
- 2-5 carob chips per pancake
Instructions:
Peel bananas and mash them into a large mixing bowl with a spatula or wooden spoon until creamy. Mix in all the other ingredients until well blended.
Heat coconut oil in a skillet and drop spoonfuls of the mixture to the size you like into the pan. Add carob chips to each pancake (we like 2-5 each).
When the pancake starts to bubble and brown at the edges, flip it and cook the other side to desired crispiness, about 3 minutes on each side. Cook more or less to taste.
Serve with a drizzle of honey and strawberries on top if you like (we do).
