Chia Seed Pudding

Ingredients:
1/2 cup chia seeds
2½ cups coconut milk
1 tablespoon honey
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon pinch of salt
Topper:
2 tablespoons almond butter
1/2 cup your choice of blueberries, strawberries, or sliced bananas
Instructions:
Mix chia seeds in a bowl with all other ingredients. Cover and refrigerate overnight until it firms into a thick pudding. Serve in an individual bowl or cup and top topped with almond butter and fruit.
