1 head of cauliflower, riced
- 1 cooked or rotisserie chicken breast, shredded
- 1 avocado, sliced
- ½ cup dill, chopped
- 1 shallot, sliced
- 1 cup cherry tomatoes, sliced in half
- 2 cups arugula, chopped
- 1 tablespoon avocado oil mayonnaise
- 1 teaspoon Truff sauce*
- 1 tablespoon extra virgin olive oil
- salt/pepper to taste
Heat olive oil in a sauté pan over medium heat, add riced cauliflower, sliced shallots, and chopped dill. Mix well and cook for 5 minutes until tender. Add salt and pepper to taste. Set aside and let cool. Once cool, place cauliflower mixture in a bowl. Add in avocado oil mayo and Truff sauce and mix well.
Serve topped with arugula, shredded chicken, sliced avocado, tomato halves, and seasoning.
